Cho'Gath's early game is genuinely weak — low base damage, telegraphed Q, and no real escape — and you are built to exploit exactly that. Start Chomp and bite him on every CS attempt; the AD steal is immediate and his base MR is low, so every trade chips him while King's Tribute refunds HP off dying minions without burning a single ability. He will try to keep max range and use Rupture to punish your step-ups: that ground spike is slow but the knockup interrupts your Frozen Domain, so read the animation and sidestep before committing W. Drop the ice zone at your feet only after you confirm his Q is on cooldown — then he has no way out, his attack speed is debuffed by your Q, and you are healing faster than his passive regeneration can offset.
