Zac's whole early game is blob sustain — he picks up the green chunks he sheds to heal, so don't try to poke him out, just out-tempo him. The moment you hit level 2 with Q and level 3 with Bladework (E), your Vital combo — Lunge a Vital, then land the guaranteed-crit empowered auto on a fresh side — strips a flat percentage of his max HP as true damage that no resistance reduces. The key discipline is Riposte: Zac's only hard CC to start a fight is the knockup when his E sling lands, so hold W for that immobilize — parrying it converts the return into a stun and hands you the trade. Do NOT burn Riposte on his W (Unstable Matter); it's just an AoE damage pulse with no CC, so it can't be turned into a stun.
