Yorick's trade hinges on E (Mourning Mist) — the spirit he throws to slow you and mark you so his ghouls leash on and his autos catch up. Don't eat E for free: bait it, sidestep, and the ghoul swarm has nothing to leash to, then you Q the Vital, Bladework-crit, and win the trade clean before Maiden ever spawns. He's one of the slowest dash-less melees in the game, so once you're on him he can't disengage.
